INGREDIENTS

  • Pork Loin – Trimmed
  • Olive Oil – Garlic Infused
  • Favorite Rub
  • Injection / Spritz Fluid
    • 1/2 Cup Apple Juice
    • 1/4 Cup Apple Cider Vinegar
    • 3 Tbl of Rub
    • 1 Tbl Worcestershire Sauce

Prep Time- 10 Min
Total Time – 2 1/2 Hours

PREPARATION

  • Mix all Injection ingredients
  • Inject every inch or so in a pattern to spread the juice throughout the loin.
  • Apply rub liberally on all sides
  • Wrap in plastic and refrigerate for a few hours to overnight
  • Preheat Smoker to SMOKE Setting normally around 150-170 degrees.
  • Place loin in smoker for 1 hour.
  • Spritz every 30 minutes.
  • Turn up the smoker to 250 degrees and cook for an additional 1 1/2 hours or until an internal temperature of 145 degrees.
  • Rest for 20-30 minutes.
